Im confused with the whole Daggers thing like my Damage is 40-53 but when I attack with my daggers im doing like 17-21 dmg with each dagger adding to less then my Phs Dmg almost everytime.

Dual daggers run at 60% the normal damage value. It wouldn't be fair to deal 200% damage equipping two daggers. Also being out of range and defense reduces the damage again.
